Arizona has a big agriculture industry, but Barry Pryor thinks the state is missing out on a big growth opportunity.

He’s a professor of plant pathology and microbiology in the School of Plant Sciences at the University of Arizona and travels around the state conducting workshops teaching people about the economic opportunities in growing specialty mushrooms.

Pryor spoke about the current state of the mushroom-growing industry in Arizona.
